comforting vegan creamy spiced lentil stew

It is getting really cold here lately, with February really making herself at home. To sooth our chills and warm us up nice and cozy from the inside, I’ve been making a lot of stews and curries full of warming spices. This creamy spiced lentil stew is so comforting and just what you need on a cold and snowy winter’s day. Full of healthy green lentils, spicy flavours, and good old veggies, this stew will keep you full and toasty for the whole day. Serve with a slice of freshly baked traditional country bread loaf and you’re set! So, without further ado, let’s dig in!

  • serves: 4
  • preparation time: 10 minutes
  • cook time: 30 minutes
  • total time: 40 minutes

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 1 carrot, sliced*
  • 1 potato, cubed*
  • 210g dried green lentils (or 1 can of tinned green lentils)
  • ½ can coconut milk
  • 1 vegetable stock cube
  • 750ml water
  • 2 tbsp garam masala
  • 1 tbsp ground cumin
  • 2 tsp ground turmeric
  • ½ tsp cayenne pepper
  • Salt and pepper, to taste

*To reduce food waste, don’t peel the carrot and potato. Just give them a good scrub and enjoy them with the skin on! It’s nutritious, adds more flavour, and reduces your food waste!

Method:

  1. In a large saucepan, heat the olive oil over a medium-high heat. Add in the onions and sauté for 5 minutes until they are soft and golden brown. Add in the garlic and sauté for another 2 minutes.
  2. Add in the carrot and potatoes and stir everything together. Leave the vegetables to soften for 5 minutes. Add in the lentils, coconut milk, vegetable stock, and water. Stir everything together until the coconut milk solids have melted and everything is well combined.
  3. Add in the spices and seasonings and stir to combine. Let the stew simmer on the stove for a good 20-30 minutes to cook the vegetables and lentils, and to let the flavour mature.
  4. Serve hot into bowls with a slice of traditional country bread loaf and enjoy!

Once completely cooled, this stew can be kept in an airtight container in the fridge for up to 3 days. Alternatively, once completely cooled, it can be kept in an airtight container in the freezer and stored for up to 1 months.

handmade christmas: vegan gingerbread fudge

Christmas is just around the corner, and if you’re like me, you’re only just starting to think about Christmas shopping. Here at Rhythm & Green, we believe that consumerism for the sake of it is… well… what’s the point? Every year I find myself buying random things that people don’t really want just for the sake of gifting them a Christmas present. This year I asked myself why. This year, more than ever, it’s important that we support small, local businesses. Here’s the mantra: SHOP SMALL, SHOP LOCAL, SHOP HANDMADE. That’s what we should be telling ourselves when we step out the door, or open out computers to get the Christmas shop done. But what if we take this one step further, and handmake our gifts ourselves? This year I have been INVESTING in homemade. It is our belief that nothing is better than homemade, and that applies to Christmas gifts too. As part of our handmade christmas series, we are sharing with you a simple recipe for Vegan Gingerbread Fudge, that you can make and gift to your loved ones this Christmas. What a special way to celebrate the holidays?! So without further ado, let’s spread some happiness with a little spice, and some gingerbread fudge.

Makes: 50 pieces

Ingredients:

  • 225g caster sugar
  • 220g soft light brown sugar
  • 60g vegan cooking butter
  • 65ml vegan double cream
  • 4-5 tbsp black treacle
  • ¼ tsp cream of tartar
  • 3-4 tbsp ground ginger

Method:

  1. Line a brownie tin with parchment paper and set aside for later.
  2. In a medium-sized saucepan, add all of the ingredients. Using a rubber spatula, stir all of the ingredients together over a medium-low heat, until the butter has melted, the sugar has dissolved, and everything is well combined.
  3. Once so, stop stirring and bring the mixture to a boil. Place a cooking thermometer in the pan and heat the mixture until the thermometer reads 240˚F (116˚C/soft ball).
  4. Once up to temperature, remove the pan from the heat and leave it to cool for 5 minutes, until the mixture has stopped bubbling. After this time, grab a wooden spoon and stir the mixture constantly at a moderate speed for 10-15 minutes, until the mixture is very thick (but still pourable).
  5. Pour the mixture into the prepared brownie tin, level off the top with a spatula, and leave it to cool until the fudge has completely set. It should be chewy and soft, not hard.
  6. Once set, cut into 1-inch squares and enjoy!

This fudge can be kept in an air-tight container in a cool, dry place. Best consumed within 2 weeks.

How to gift wrap:

This Vegan Gingerbread Fudge is the perfect gift for your loved ones this Christmas, as a sweet and spicy little way to end the day. To wrap, I recommend stacking several pieces of fudge on top of each other in the centre of a large square of parchment paper. Fold the parchment paper over the top of the fudge stack to create a little bundle. Tie with Christmas ribbons or string, add a name tag, and voila! These fudge may go sticky in their wrapping if left in a warm place, so I also advise wrapping it on the day you plan on gifting it. These little parcels of fudge work great in Christmas gift hampers or as stocking fillers. Enjoy!

And there you have it. The perfect little Christmas gift for your loved ones.

If you’ve never had panettone before my friend, then you’ve been missing out! Panettone is by far my FAVOURITE treat to have at Christmas time. This soft, spiced, and sweet bread is jam-packed full of Christmas fruits and a cheeky splash of festive brandy. This Vegan Panettone can be enjoyed at any time of the day – I love treating myself to slice for breakfast on Christmas morning! vegan spiced mince pie cookies

As part of our handmade christmas series, we are sharing with you a simple recipe for Vegan Spiced Mince Pie Cookies, that you can make and gift to your loved ones this Christmas. What a special way to celebrate the holidays?!

It’s not Christmas without a good old mince pie! Mince pies are an absolute must when it comes to those festive feelings in my household. Usually, I just head down to the nearest supermarket to get my mincemeat and mince pies, but this year I decided to mix it up and make something of my own for a change. I’ve been INVESTING in homemade this year and so far everything I’ve made has been even more delicious than it would have been shop-bought. These Vegan Spiced Mince Pie Cookies are jam-packed full of winter fruits, cozy festive spices, and a good helping of holiday spirits (figuratively and literally). Super simple and so delicious, this recipe is also 100% vegan, so you don’t have to worry about a thing! Without further ado, let’s dig in!

INGREDIENTS:

  • 150g plain flour
  • 1 tsp baking powder
  • Pinch of salt
  • 110gsoft light brown sugar
  • 100g vegan butter
  • ½ tsp vanilla extract
  • 230g vegan mincemeat
  • 100g raisins

METHOD:

  1. Preheat your oven 180˚C (350˚F) and line a baking sheet with a reusable silicon baking sheet.
  2. In a large bowl combine the flour, baking powder, and salt.
  3. Cream the butter and sugar together, in a separate bowl, until smooth and creamy. Add in the vanilla and whisk until combined.
  4. Add the flour mixture to the creamed butter and stir using a wooden spoon until everything is well combined. Stir in the vegan mincemeat and the raisins until everything is evenly distributed.
  5. Divide the cookie dough into about nine (9) pieces and roll them into balls and place them on the prepared baking sheet.
  6. Bake in the oven for 15-20 minutes until the cookies are golden brown and cooked through. Leave them to cool for a couple of minutes and enjoy!

Keep these cookies stored in an airtight container in a cool, dry place, and consume within 3 days.

And there you have it! An extremely simple, super delicious vegan mince pie cookie, perfect for that afternoon treat you’ve been craving!

VEGAN SPICED MINCEMEAT

It’s not Christmas without a good old mince pie! Mince pies are an absolute must when it comes to those festive feelings in my household. Usually, I just head down to the nearest supermarket to get my mincemeat, but this year I decided to make my own for a change. I’ve been INVESTING in homemade this year and so far everything I’ve made has been even more delicious than it would have been shop-bought. BLACKBERRY SYRUP

Over the summer, we have been picking endless amounts of blackberries – so many, in fact, that we had no idea what to do with them all! Blackberry syrup is extremely easy to make and it requires a minimal number of ingredients. Making it yourself is also a lot cheaper than buying it in the supermarket and you know that the fruit hasn’t been shipped from overseas or grown out of season (so many emissions!!!). handmade christmas: vegan spiced mincemeat

Christmas is just around the corner, and if you’re like me, you’re only just starting to think about Christmas shopping. Here at Rhythm & Green, we believe that consumerism for the sake of it is… well… what’s the point? Every year I find myself buying random things that people don’t really want just for the sake of gifting them a Christmas present. This year I asked myself why. This year, more than ever, it’s important that we support small, local businesses. Here’s the mantra: SHOP SMALL, SHOP LOCAL, SHOP HANDMADE. That’s what we should be telling ourselves when we step out the door, or open out computers to get the Christmas shop done. But what if we take this one step further, and handmake our gifts ourselves? This year I have been INVESTING in homemade. It is our belief that nothing is better than homemade, and that applies to Christmas gifts too. As part of our handmade christmas series, we are sharing with you a simple recipe for Vegan Spiced Mincemeat, that you can make and gift to your loved ones this Christmas. What a special way to celebrate the holidays?!

It’s not Christmas without a good old mince pie! Mince pies are an absolute must when it comes to those festive feelings in my household. Usually, I just head down to the nearest supermarket to get my mincemeat, but this year I decided to make my own for a change. I’ve been INVESTING in homemade this year and so far everything I’ve made has been even more delicious than it would have been shop-bought. This Vegan Spiced Mincemeat is jam-packed full of winter fruits, cozy festive spices, and a good helping of holiday spirits (figuratively and literally). Super simple and so delicious, this recipe is also 100% vegan, so you don’t have to worry about a thing! Without further ado, let’s dig in!

Ingredients:

  • 200g raisins
  • 200g dried currants
  • 100g vegan suet
  • 170g dark brown sugar
  • 1 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 lemon, zest and juice
  • 1 orange, zest and juice
  • 75ml dark rum
  • 75ml brandy

Method:

  1. In a large saucepan, combine all of the ingredients except for the vegan suet. Heat the ingredients over a medium-high heat, stirring constantly, until the ingredients form a jam consistency, and the mixture is gently bubbling.
  2. Remove the pan from the heat and leave it to cool for a couple of minutes. Add in the vegan suet and stir until it is evenly distributed.
  3. Transfer the mincemeat into hot, sterilised jars, and add the lids to seal. Leave the jars to stand, cool, and seal for 24 hours, then store in a dark, cool, and dry place until ready to use. Once the jars are opened, consume the mincemeat within 5 days.

And there you have it! An extremely simple, super delicious vegan mincemeat recipe, stored up and ready to use for whenever you need it! Check out our recipe for Vegan Spiced Mince Pie Cookies for another way to enjoy this traditional treat!

handmade christmas: diy scented sugar scrubs

As part of our handmade christmas series, we are sharing with you a simple recipe for DIY Scented Sugar Body Scrubs, that you can make and gift to your loved ones this Christmas. What a special way to celebrate the holidays?! So without further ado, let’s spread some happiness with a simple self care sugar scrub.

DISCLAIMER: these DIY Scented Sugar Scrubs are for external bodily use ONLY. Under no circumstances should this product be consumed/eaten, or used on delicate/sensitive skin or face.

YOU WILL NEED:

  • 100g granulated sugar
  • 220g coconut oil
  • Scents of your choice e.g. vanilla extract, almond extract, peppermint oil, lemon zest

TO MAKE THE SCRUB:

  1. In a large bowl, cream together the granulated sugar and coconut oil, until smooth and well combined.
  2. Add in your scent of choice to the bowl, little by little until you reach your desired level of scent. Stir all the ingredients together until everything is well combined.
  3. Transfer the body scrub to an airtight container or jar and keep stored in a cool, dry place, out of reach of children.
  4. To use, scoop some of the scrub out of the jar using your fingers and rub it gently onto your arms, legs, or torso to exfoliate.

Voila! The perfect little handmade christmas present to give to your friends and family this Christmas.

handmade christmas: salt dough snowmen ornaments

That’s what we should be telling ourselves when we step out the door, or open out computers to get the Christmas shop done. But what if we take this one step further, and handmake our gifts ourselves? This year I have been INVESTING in homemade. It is our belief that nothing is better than homemade, and that applies to Christmas gifts too. As part of our handmade christmas series, we are sharing with you a simple recipe for salt dough ornaments, that you can make and gift to your loved ones this Christmas. What a special way to celebrate the holidays?! So without further ado, let’s spread some happiness with a simple snowman to hang on the tree.

DISCLAIMER: these snowmen are for DECORATIVE PURPOSES ONLY. Under no circumstances should the dough or the finished ornaments be consumed/eaten.

You will need:

  • 300g plain flour
  • 275g fine salt
  • 250ml warm water
  • snowmen cookie cutters

To make:

  1. Preheat your oven to 90˚C and line three baking sheets with parchment paper.
  2. In a large bowl, combine the flour and salt. Gradually add in the warm water, stirring everything together until it is well combined.
  3. On a clean and well-floured surface, roll out the dough until it is 1/4 cm thick. Using the cookie cutter, stamp out as many snowmen as will fit on the dough. Transfer the dough snowmen onto the baking trays. Once all the dough has been stamped out, or the trays have been filled, place the salt dough figures into the oven to bake for 1 hour.
  4. After 1 hour, remove them from the oven and stamp out little hoops at the top of the snowmen using the end of a chop stick (this is so they can be hung from the Christmas tree).
  5. Put the salt dough figures back into the oven and continue to bake for another 2 hours until they are completely dried out. Remove them from the oven and leave them to cool completely.

To decorate:

You can decorate your salt dough snowmen in anyway you like. I used watercolour paints and painted on black eyes and buttons, a carrot nose, and hats and scarves onto my snowmen, but you could also try giving your snowmen funny faces or writing personalized messages or names onto them to make the gift even more special. If you do decide to decorate your snowmen, you might want to finish them with a varnish. Once the snowmen are dry, thread loops of string or twine through the hoops at the top and tie them off.

Voila! The perfect little handmade christmas present to give to your friends and family this Christmas.
